You are correct in the way that mirror polishing a piston crown works. The process can reduce crown temps by 5-10 degrees C. EGT's will also rise as more heat is rejected out of the chamber. This may help spool-up. The process works best if the chambers and valve faces are also polished. With regards to carbon build up, it's effectiveness reduces with increased carbon layer build up.
For hard facts you can purchase SAE paper 902141 from www.sae.org for around £7. This process can be best described as the cherry-on-top-of-the-icing after doing stuff like oil jet piston cooling etc.
